Old School Chicken Kievs!

If you offered me a Chicken Kiev a few weeks ago I would have politely refused due to the fact that the only Chicken Kiev’s I’ve ever eaten have been so bland and flavorless, the garlic oil usually just weeps out of the golden covered piece of fabricated meat the minute you stick it in the oven! With this in mind, I wanted to try to revamp this old 70’s classic  and bring it back to life with a bit of luck, so rewind to last Saturday… the day that i brought Chicken Kiev’s back into my life! Yummmm!!

Chicken Kiev oosing with cheesy garlicky goodness!

Chicken Kiev Recipe:

(Serves 2)

Ingredients:

  • 2 large chicken breasts
  • 1/2 pack of garlic & herb Boursin cheese
  • 6 strips of  thinly sliced serrano ham
  • 2 slices of white or brown bread blitzed into breadcrumbs
  • 3 tbsp plain flour
  • 2 eggs
  • 4 tbsp olive oil or sunflower oil
  • freshly ground black pepper & sea salt

Method:

  1. Heat oven to 180C
  2. Place chicken breast on chopping board and cover with a sheet of cling film.
  3. Using a rolling-pin, bash the chicken breast until it is about 1.5 centimetre’s thin.
  4. When the chicken breast is flattened out, repeat this process with the other breast and then remove the film.
  5. Take the boursin cheese and half it so you are left with 2 quarters.
  6. Evenly spread out a quarter of the cheese on the chicken breast with a plastic spatula.
  7. Repeat with the other breast.
  8. Roll up the chicken breast lengthways’ tightly so that all the cheese is securely inside the breast.
  9. Wrap each slice of the Serrano ham around each breast until breast is sealed tightly.
  10. Roll each breast evenly in the flour, then the beaten egg, then in the breadcrumbs so that the chicken breast is completely covered in breadcrumbs .
  11. Season each breast with salt & pepper.
  12. Heat the oil in a shallow frying pan or saucepan until very hot, drop a breadcrumb in the oil to test the temperature, the breadcrumb should turn golden.
  13. Once the oil is ready and hot enough place  the chicken breast in the pan for about a minute or until the breadcrumbs have turned golden, then turn over and repeat on the other side untill all sides od the breast are golden. Do not leave in the pan for too long as you don’t want the breadcrumbs to burn! Repeat process with other breast.
  14. Once you have brown the chicken breast in the oil, use a slotted spoon to  place them on a sheet of kitchen paper to drain of any excess oil.
  15. Pop your chicken breast’s  onto a baking tray and into the middle of your preheated oven for about 15-20 mins. Keep an eye on them so that they do not burn, and make sure the chicken is cooked through before serving!
  16. Et Voila! Enjoy your homemade Chicken Kievs with a nice salad or even some old school baked beans! 🙂 Just wait until that creamy garlicy goodness oozes out! Yummy!

Hello and welcome to my food blog/diary, for people who love easy, healthy and delicious home-made food like me! 🙂

It’s pretty simple for me… I love food and I love cooking and I believe that you are what you eat! If you put a bit of TLC into what you cook each day, you will not be disappointed, and the reward’s are so satisfying! I absolutely love to cook almost all types of food, I love experimenting with new recipes, but my favourite has to be Thai. Having travelled Thailand for 8 months, I picked up some pretty awesome recipes which I will definitely be sharing with you!

I basically decided to start a blog or more so a diary, as I find myself taking pictures of  almost everything that I cook and also of anything I eat out that I really enjoy! My friends find it amusing that I take pictures of EVERYTHING that i make; and so my husband suggested I keep a food diary of all of my recipes with the pics that are filling up my phone!! Not a bad idea I thought as I always forget dishes that I have made and curse myself for not writing them down, so here it is…Some are my own recipes and some are not, but I do tend to modify most of the food that I make to satisfy  my palette and my husband’s, who I might add is my guinea pig when it comes to trying out new recipes, oh and my number 1  fan!

I hope you find my recipes useful, and please let me know if you have any ideas that you think could improve my recipes, that’s what this is all about after all!!
